The other thing I noticed when I unboxed the bread maker is that several of its settings are just “Rapid” versions of standard cycles.

However, the Cuisinart sometimes requires a watchful eye during the early stages of many recipes to ensure the dough is the proper consistency. First, add all the wet ingredients (milk, butter, and eggs), into the baking pan of the bread maker. I'm a bread machine junkie, having owned/tried numerous brands: Oster, WestBend, Hamilton Beach, Panasonic, Zojirushi, Breadman, Dash, DAK, Nictemaw, and now this Cuisinart. This unit is small and has all the settings we need while not taking up a huge amount of counter space. Dried fruit, cranberries for example, have to be added by hand at a predetermined time in the baking cycle.The machine did a good job giving the bread a thick, crunchy crust, but the texture wasn’t as light as you’d expect from French bread.
